Christmas recipe:how to prepare the Apple Vanilla and Nutella® log?

During the end-of-year holidays , we put our hands in the dough and we go to the kitchen, to make gourmet desserts. One of our favorites is the Yule log. A must-have of the season, it can be made both iced and rolled, to delight all our guests during the month of December. The recipe that made our mouths water? The Apple Vanilla and Nutella Christmas Log , for a gourmet and comforting dessert, very easy to make. We don't hold you back anymore, here is the recipe!

How to prepare the Apple Vanilla and Nutella® Christmas log?

Ingredients for 18 people:

  • 3 egg yolks
  • 100g of sugar
  • 250g whole milk
  • 300g whipping cream
  • 2 vanilla pods
  • 16g gelatin sheets
  • 18 boudoirs
  • 450g of apples
  • 270g of Nutella® (15g of Nutella per person)

Steps for preparing the Apple Vanilla and Nutella® Yule Log

  1. Soak 8g of gelatine sheets in a little cold water to soften them. Cut the apples into small dice. In a saucepan, add the apples, 30g of powdered sugar and 2 tablespoons of water. Simmer for 10 minutes.
  2. Squeeze the water from the gelatine sheets and add them to the pan. Mix until the gelatin is dissolved. Then place the mixture with the apples in a mold and set aside in the freezer.
  3. Soak 8g of gelatine sheets in a little cold water to soften them. Put 50g of whipping cream, the milk and the vanilla pods in a large saucepan. Heat the mixture and turn off the heat just before the boiling point. At the same time, in a large bowl, mix the egg yolks and 75g of sugar.
  4. Put the mixture into the saucepan. Heat gently and stir with a wooden spoon until the cream thickens but before lumps form. Remove from fire. Squeeze the water from the gelatin sheets and add them to the pan. Mix until the gelatin is dissolved. Keep the mixture aside. In a separate bowl, whip the remaining whipping cream until soft peaks form when the whisk is removed from the mixture. They are soft peaks when their tops fold in on themselves. Add whipped cream to custard.
  5. Pour the vanilla mixture halfway into the cake tin. Then add the apple mixture. Pour the rest of the vanilla preparation.
  6. Place the ladyfingers and set aside in the freezer for 4 hours.
  7. Remove the log from the mold and place it on a plate. Book cool. Before serving, fill a piping bag with Nutella and decorate the log.
